-6 to 8 mint leaves
-1/2 large ripe lime (cut into wedges)
-1/4 to 1/3 cup pineapple pieces
-1 oz. simple syrup
-2 oz. Bacardi Pineapple Rum
-4 to 5 oz. club soda
In a drinking glass, similar to the one above (about 14 oz.), place lime wedges and fresh mint leaves. Use a muddler to crush the lime wedges and mint. Next measure out 1/4 to 1/3 cup of pineapple pieces (I used Safeway Farms pineapple cups), and add them to your glass and muddle well. For a stronger pineapple taste I used some of the juice from the pineapple cup. Then add 1 oz. simple syrup and 2 oz. Bacardi Pineapple Rum. Fill the remaining space with ice, then pour 3-4 oz. of club soda into the glass (to the brim). With a spoon mix ingredients and pull lime wedges and pineapple pieces towards the top. Garnish with a lime wedge and enjoy!
