Mojitos are probably my most favorite cocktails ever. They are so light and refreshing without being too sweet. I enjoy them more in the summer, but are perfect anytime of the year!
-1 lime, 1 extra lime for garnish
-6 to 8 mint leaves
-1.5 shots of white rum (I prefer Bacardi)
-3/4 shot of simply syrup
-club soda, (6 pack of 10 Oz. bottles works well)
-Utensils: muddler, cocktail stirring spoon, Tom Collins cocktail glass
Cut your lime into 8 wedges. Place your mint leaves and all lime wedges into a Tom Collins cocktail glass, which can be found at Crate & Barrel. You will need a muddler which can be found at William Sonoma. Muddle your lime and mint until all the juices are squeezed out. Then add you white rum and simple syrup. Fill the glass with ice, about 1/2 inch from the top. Then take you club soda and fill the remainder on the glass, about 6 Oz. Take a cocktail spoon for mixing, which can be found on Amazon. As you stir, pull muddled lime wedges and mint in an upward motion to spread the ingredients throughout the drink. This also gives the drink a prettier appearance. Add a lime wedge to the rim of the glass for garnish. Enjoy!
