Kale & Smoked Salmon Salad

Smoked salmon is definitely one of my weaknesses so figuring out a healthy alternative that incorporated this salty little fish was super exciting! I started by mixing my dressing to let it chill in the fridge a bit. My recipe actually makes enough for multiple servings, so you will have plenty left over for other salads!

After mixing up my dijon vinaigrette dressing, I mixed it with my kale and let it sit in the fridge to soften the tough leaves. This is not essential to the recipe, it all depends on how tough you like your lettuce.

After I placed the kale on the plates I evenly placed the remaining veggies on the plate to create a pretty display. Lastly I cut my smoke salmon into bite-sized pieces and layered 3 oz. on top of each salad and drizzled a little extra dressing on top.

This recipe serves two!

Ingredients (salad)
-6 oz. smoked salmon
-4-5 stalks of kale (chopped)
-8 cherry tomatoes (halved)
-12 slices of cucumber
-1/4 red onion (chopped)
-Optional: parmesan cheese or toasted pine nuts for topping

Ingredients (dressing)
-2/3 cup olive oil
-2/3 cup red wine vinegar
-2 Tbsp dijon mustard
-2 cloves garlic (minced)
-2 tsp dried basil
-1/4 tsp sugar
-1/4 tsp salt
-1/4 tsp pepper

Directions
In a mason jar or separate bowl, combine all ingredients for the dressing and mix well. In a large mixing bowl combine all chopped kale and your desired amount of dressing (my recipe makes more 4 servings). Mix until all the kale is lightly coated in the dressing, then place in the fridge. Meanwhile, chop all other vegetables and divide them evenly for two. On two large plates, place equal amounts of kale, red onion, cucumber, and cherry tomatoes. Lastly, top each salad with 3 oz. of smoked salmon. Drizzle more dressing on top if desired. Enjoy!
