Baked Potato Chips

I was rummaging through the refrigerator the other day and came across a big sac of Mini Red Potatoes. My family loves to snack on potato chips every late afternoon. So naturally, I decided to make some tiny baked potato chips myself! Enjoy!

-8-10 mini red potatoes
-1 Tbsp. olive oil
-any other desired seasoning
-Utensils: mandolin (optional)

Preheat oven to 400 degrees. Slice potatoes into 1/10th inch slices. Toss potato slices and olive oil in a bowl. I hand-sliced my potatoes, but a mandolin makes the job much easier. It can be found on amazon and gets every potato slice identical, creating a more even cooking time for each chip. Take multiple pinches of salt and any other desired seasoning and sprinkle over potatoes while tossing mixture. Once you reach your desired amount of seasoning, lay potato slices flat on a cookie sheet and place in oven. Time will vary depending on thickness of slices, watch closely as chips near the end of the cooking process. I cooked mine for 22-24 minutes or until edges slightly pulled up and the texture appeared crispy. Remove from oven and allow chips to cool. Enjoy!
