Angel Hair Pasta with Tuna

I love Italian food but am also a fan of light cooking. I have seen many different versions of this dish in light cooking magazines, but this recipe is probably my favorite. Simple, healthy, and protein packed! This recipe serves about 2!

Ingredients
Tuna Marinade:
-1 tuna steak (8 Oz., cut in half)
-2 Tbsp. white wine
-2 Tbsp. olive oil
-1/2 tsp. dried basil
-1/2 tsp. dried oregano
-1/4 tsp. salt
-1/4 tsp. pepper

White Wine Sauce:
-6 Tbsp. white wine
-1 Tbsp. olive oil
-1 tsp. dried basil
-1 tsp. dried oregano
-1/2 tsp. salt
-1/4 tsp. pepper
-1/2 white onion, chopped finely
-1 cup cherry tomatoes, diced
-1/4 tsp. brown sugar
-3 Oz. angel hair pasta

Directions
Seal the marinade mixture with the tuna in a plastic bag, turn to coat tuna and place in the refrigerator for one hour.

To make the white wine sauce heat olive oil in a large skillet. Saute onion in olive oil until tender. Add the brown sugar, tomatoes, 6 Tbsp. white wine, basil, oregano, salt, and pepper. Bring the mixture to a boil. Then reduce heat and simmer for 5 minutes. Meanwhile you can begin cooking your pasta according to the package directions.

Drain and discard the tuna marinade. Place your tuna pieces over the tomato and white wine mixture in the skillet. Return to a boil. Then reduce heat and cover the skillet; allow mixture with tuna to simmer for about 6 minutes, or until the fish flakes easily with a fork. Remove the tuna pieces and keep them warm. Drain your pasta and add it to the tomato and white wine mixture. Toss to coat. Divide between two plates and top with a piece of tune! Enjoy!
